Ingredients
1- Prepare the lemon butter: gently melt the butter then add 1 tbsp. of lemon juice off the heat. Set aside.
2- Cut the salmon and shallots into small cubes.
3- Cut the peach into small cubes.
4- Mix the salmon, shallot and peach in a bowl then add: the remaining lemon juice, oil, balsamic vinegar and mustard, chopped dill.
5- Mix gently then place everything in the fridge.
6- Spoon into a small bowl then add the lemon butter at the last moment before serving
Salmon tartare, lemon butter & peaches
15 minutes
– 2 fresh salmon fillets
– 1 very ripe peach
– 30 g of unsalted butter Beurrerie Échiré range
– The juice of a lemon
– 1 tbsp. old-fashioned mustard
– 1 tbsp olive oil
– 1 tbsp balsamic vinegar
– 2 shallots
– Fresh dill
